Flat Breads

Two breads that need no oven and no special equipment, and both are enormously better made at home than bought in a bag.

English muffins start as a wet, slack batter, and that is exactly what gives you the nooks and crannies. You roll, cut and cook them on the griddle and watch them come up. Then corn tortillas from masa, pressed and cooked with the three flip method that makes them puff. Once you have eaten one straight off the griddle the store bought ones are finished for you.

This is a relaxed room. No judgement, no rushing, and nobody expects you to have done this before. Beginners are genuinely welcome, and so are people who have been baking for years.
